I order from cackle , although from others in here I've heard that cackle isn't the best place. However so far I've had good luck with them.Also, I'm looking for recommendations on which Hatchery to order my Cornish crosses from. We plan on ordering early spring.
if your still alive after 40+ years of eating it done your way, then your way is probably a safe process. I LOVE tried and true over new any day.I'm sure they are out there, though I've never had occasion to look for them. We've been canning chicken for 40 yrs now, so pretty much do it as we've always done.

my best recipe book belonged to my great-great grandmother. From her original starts there have been additions by ever generation.Me too! I'm not much for going by books unless it's a book written by someone who has put the information to use for a long period of time and is reporting on that practical experience. We learned to can chicken from my grandma(except she never owned a pressure canner....did it all WB method), who had been canning it for that long or more her own self, probably learned it from HER grandma, who knows?
