How do you prepare your Coturnix quail for dinner?

Okay, I know this thread is old, but this seemed to be the thread with the most recipes in it. Since Snack decided to be mean, I now have three quail to cook. I cooked my first one a few weeks ago when I took care of my extra roos, and I wasn't impressed with what I turned out. It was tough and gamy tasting. I think my problem was that I cooked it like I would a chicken, but for less time (baked with a bit of butter and poultry seasoning).

I've read about brining. Does that make it more tender? @muddy75 posted this brine recipe that I was planning on trying this weekend.

4c Apple cider 1/4 c each apple cider vinegar, dark brown sugar, kosher salt

Any suggestions you may have would be appreciated, and as I find recipes that I like, I'll post them here.
after brining several, I have started leaving out the vinegar in my brine for quail
 
I did an experiment today that turned out to be quite successful. Measurements are going to be a bit vague because I made this up as I cooked.

This recipe made 5 pasties

Enough pie crust for one pie (I made mine from scratch)

2 quail, boiled until the meat falls off of the bones: separate meat from bones, discard bones (keep the broth)

Chop and cook 1 slice of bacon until browned and crisp. Add about 3 Tbsp onion to the bacon and brown in the bacon grease. Add carrots and peas to taste. Add quail meat and enough broth to simmer it all together in. Add about 1 Tbsp worcestireshire sauce, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp poultry seasoning 1/2 tsp soy sauce.

Add flour gradually until the filling thickens.

Make 5 circles of pie crust and divide the filling between them. Fold over and crimp the edges.

Cook at 420 for 25 minutes.

OK, I'm new to raising quail but grew up in the 60s and 70s quail hunting with my dad twice a week. Our favorite recipe was pan fried or roasted then smothered in brown gravy to simmer for a while. Served with wild rice and a green vegetable.

I was here a couple years back when I was getting started with chickens. I'm going to try quail now. Diversify the homestead.

Have you sourced your birds? We have a recommendation, but close can be better.
