How much to charge for whole free range meat chicken?

Pastured non organic is what's offered in my area. The low pens in fields that are filled with CornishX and moved every day or two. Going rate is $3.50/lbs here.
 
I easily got 3 bucks a lb last summer for 30 birds I sold I did the butchering. I'm not sure how I came out as I didn't keep good records since I raised sort of a mix of chickens not all for sale. This year I plan to do it again and get a better idea of how I'm coming out. 3 dollars per lb as far as I'm concerned is dirt cheap including processing. I see prices on Craigslist ranging from 2.50 for cx up to 3.50, usually for rangers, plus butcher's fee, which at the only poultry butcher around is currently 3 bucks bird whole and paper wrapped, price goes up substantially for shrink wrap and cutting into portions.

For capons, we sell for $10 to $16 bucks per pound. Some folks are thrilled to get them at all and others think we're crazy. Anyone who thinks you can raise quality capons for less...you do it and we'll buy your product!
