IMO, I would tell the neighbor each time he calls that I'm sorry I don't have any extra, always polite and cheerful. No explanation necessary. DH needs to do the same.
I have never sold any eggs from my six hens but I have given to many friends and neighbors. One neighbor is an avid hunter. We allow him to hunt on our land and he gave us a whole deer this season, beautifully hung and cleaned. In return, we give him eggs and food from our garden, and watch his property when he is on vacation. Two generous neighbors have offered to look after our hens should we be away from home. Another neighbor can't stand to receive eggs or apples without giving something back. We're very lucky to have wonderful neighbors.
