Wish I could make salsa, or guacamole, with cilantro. My Mexican husband hates it. One leaf and he can tell.
well just make a batch for yourself or add it your bowl as you eat it
cause I told Hubby I dont want any sugar in stuff he makes or hot sauce or etc . so he makes it regular and "doctors" his stuff as he eats each serving
he hates garlic and I like it...

Yes! Thanks for clarifying my post for me. The most important thing is to cook the roux long enough to get the flour taste out of it.
I do not cook the roux long enough to get a lot of color. I don't want to wear my self out!
Yes, you hit the nail on the head. That is far more important than color, color is more astic.

That's the way we do it at my house. I'll make DW pico with parsley split it in half and add cilantro for me along with some more HOT peppers.
 
Where I was going wrong is getting it to cool, once I achieved the desired color. Adding the trinity, just before I got to my desired color was like magic.
Almost moved to mountains in Northeast corner of TN, before daughter came along!! DH was ready to go even though we would have had to buy a 4 wheel drive truck to get to and from house and would have truely been off the grid. It was so beautiful and peaceful. Want to say it was Cock County.

I was in Alexandria for three years. DW and kids stayed for four.

I love it here. My closest neighbor is about a 1/4 mile away... And I'm in the woods.
