The trick is to have the right heat, watch the bubbles and have a lot of patients. LOLI spent three years in Louisiana and could not master a roux. Went to Korea, and learned in a couple of months, by using Paul's book and being taught by a Cajun cook.

Almost moved to mountains in Northeast corner of TN, before daughter came along!! DH was ready to go even though we would have had to buy a 4 wheel drive truck to get to and from house and would have truely been off the grid. It was so beautiful and peaceful.
