The perfect cooking vessel for our roasters is that black roasting pan grandma had with cup or so of stock in the bottom.:old

Edited to add: roast between 275 and 325 to an internal temp of 150, then pull it out and let it rest...

Grandmas were never wrong about food. I base all my cooking decisions on, "Would grandma do this? Would grandma eat this? WWGD?"

Typically a chicken is 2-4 hours.. Too long can make it salty/dry. When I brine, I rinse really well with cool water, give it a nice olive oil rub down, sprinkle it with my poultry rub. Adding a lemon with slits in it to the cavity is supposed to help tenderize it a bit, I use lemon, lime, and traditional aromatics and herbs.
You can seperate the skin from the breast if you are baking and rub the flesh on the inside with a little olive oil or butter to keep the meat moist. Works pretty well.

Just to stay on topic - it's hotter than blue blazes here.

Now tell me why people from New York come all the way down here to "run"? They don't have enough roads, mountains, trees, shade, or bears?

I thought I had seen it all until I saw the tutus, the cat ears, the onesies, the dog earsence, rabbit ears, ear muffs????, the horsetail coming out of some guy's butt, all the naked heads from 20 - 100 yrs old shining in the sunlight, and at least one I would SWEAR was only wearing body paint!

Can't let the turkeys out again until all the weirdness has gone by..............
 :duc

But - I am watching them :pop
Do you have decadence week there too (we do and that's what it sounds like) lots to see, but not for the kiddies!!!

I'm glad I'm in the south, no horsetail butts just a bunch of 200 pound bicyclist wearing aerodynamic gear. ..ahhh modesty. :)
I am in new orleans, and yes we have decadence week every year. We took the 14 year old daughter to pensacola for the long weekend. When it's at it's height. Of course there was an older man in a weenie bikini on the beach. So I am not sure it did any good to get away.

No on decadence week - not unless these people live it year round in NY! lol

It's just striking me odd and can only imagine what the neighbors' are thinking.

Mind you, this area has two churches to every bar - and there are LOTS of bars!

Oh OH! That's what I didn't add to the previous post. One gal (I think it was a gal) had on strap-hips - neon pinks ones!

I think we get the bike riders in another week or two.

Poor turkeys.
