The conservation dept. finally admitted we do have them when farmers started shooting them attacking their cattle. Somehow many dead big cats convinced them.

Each region of the country has specialties that have held on. Czech kolaches around Texas - think pigs in blanket. Boudin in Louisiana. Beignets really are New Orleans specific. People in Texas think it is strange you can get hot Boudin in Gas Stations.

Of course, I'd never seen anyone eat chili with cornbread until I got here. Or rice. We always ate it with Fritos or crackers.

Looks like we need to be doing a lot more than just thinking. TS Maria is expected to do some pretty rapid intensification, and follow a track similar to Irma's during the next few days. If it does what all of the models seem to indicate that it will do, it will run right over Puerto Rico on Thursday as a Cat 3 or 4 hurricane. How hideously ironic that this storm is named Maria.

I also mailed her a sourdough start. She has been baking different sourdough bread recipes too. Her DH and step son have been getting to eat all that wonderful baked goods lately.

I was just talking with somebody here at work from Caguas. He's waiting for the airports to open up again so he can get down there and get his dad. He's worried because his father has a generator, but that lights you up to the criminals, who could come in and steal from the house, let alone take the generator and the gas. His dad is a diabetic, so he needs the power for his insulin. The guy I was talking to is really worried about how bad its going to get down there.

Just a bit of trivia.... I was looking up about that It movie. The actor playing the clown is a fellow called Bill Skarsgard and he is the son of a famous Swedish actor called Stellan Skarsgard. YES Agreed. So sad seeing the photo and videos of the islands and the people. Yesterday they were saying PR was running out of fresh water and food. Their inland reservoir is nearly empty. You just get their regular ones, they should be glazed. I believe that's all they used to be but in past years they've gotten fancy with toppings/fillings, etc. Probably to rival Dunkin Doughnts. We didn't have Krispy Kreame in DE until a few years ago. I grew up with Mr. Doughnut (still remember the doughnuts on a stick) and then Dunkin.

Baking is an art. Just like other arts, practice makes perfect. The good news is that you get to eat your mistakes. Bad news is that bad bakers are fat. Good bakers are fatter. Skinny bakers should be viewed with suspicion (unless they have chickens). And pastry chefs run the gambit.

Now I want a king cake. Only 5 months to wait. It's bad form to bake one out of season.
