You do know it was the Cajun that made it work for you , right?I spent three years in Louisiana and could not master a roux. Went to Korea, and learned in a couple of months, by using Paul's book and being taught by a Cajun cook.

You'd be picking them out of your meals daily over here.I do... especially since I can't eat bell peppers. I can have hot peppers, but sweet peppers I can't eat. It effects my reflux, and mysteriously the others like jalapeno or pablano don't.

Oh I hate it. I grew up eating peppers. But I also hate the reflux and indigestion it gives me. I will sometimes cook with them and either ignore and eat them or pick them off. Problem with picking them off is their oil is already in the dish so it doesn't make much difference.
I will add to this by saying that my reflux is service connected... I blame the D-Fac for my bad gut and inability to eat peppers. Lol

nothing about this on our 5 O'Clock news, will pay closer attention at 6, I am in New orleans, so may impact North Louisiana, Arkansas, Texas, etc.Folks, I don't want to be a wet blanket--I just looked at radar of what's left of irma. It's in North East Louisiana and on a path to either Austin or Houston. I don't know how strong it is but keep in mind when it went over me I got a drizzle and 4mph winds. Probably worth while to check your local forecasts.
