Popeye's has changed owners anyway, they are now owned by whoever owns Burger King. And they are planning to change the menu, first on the list, no more red beans and rice UGH!! Don't know what they will do in New orleans, where it all began and people aren't going to give up their red beans easily!! Guess we will see, but I have a feeling in the next few months or so you wont be missing much. IMO

Is this why KFC is now promoting all of these different styles of chicken? It was always just KFC...regular, crispy, crispy hot....now you have all of these "styles". Hubby and I are Popeyes fans! Had no idea they were sold! Hubby likes his beans and rice...he will not be happy. :(

The reason for peeling potatoes when you can them is the skin discolors the potatoes during the pressure canning process. The tannins in the skins leaves the water dark...especially when canning new potatoes.

I wondered about that... Wonder how many of us "just do it because that's how grandma did?" I use russets in my green beans and see very slight discoloration. hmmmm:caf
 
Mornin Y'all... (Good Evening @potato chip ). How was everyone's weekend? My inlaws had a great visit, if short. Went to the Eastern States Exposition (aka The Big E) on Friday, and then hung out on a rainy day in my kitchen playing games. It was a good weekend...
Too bad my XH had to ruin it by texting me and telling me he wants to have visitation with the kids (which he legally can have, but hasn't done it in 11 years). I told him sure, give me my 3 weeks written notice so I can get a supervisor. It was a bad marriage, I got custody of our three children, and his child from his first wedding (that tells you how bad he was). Then he insists that he just wants to take us all out to dinner, so that the kids are comfortable. I told him that I don't want to sit through an awkward dinner with him, but thanks. So, because I keep insisting on staying to the letter of the law of the divorce decree/custody paperwork, he's now threatening me with a custody battle. That is, he's telling my eldest (the one biologically not mine) that he's going to take me to court for custody, and that I better have a ton of money to fight him, cause he's going to rake me for all I'm worth.
LMAO!!! Had me up most of the night, I'll be honest... but damn... he really thinks he can get custody and/or forced visitation with two children that don't even know him because they were toddlers when he was dragged out of the house in hand cuffs 11 years ago.

I lost my attraction to KFC years ago. Popeye's or not chicken, really. I would guess they are trying to cater to the customers. Adapt or die!

Red beans & rice is a complete meal. Usually, but not always, has sausage floating in it. Another two pot meal that just gets better with age. Served with rice or cornbread. Heavily seasoned. There are so many different permutations.

Went to Copeland's (ages ago) and had the mashed potatoes. Skin on, red potatoes. Think of the seasoned spuds you get at a crawfish boil fresh out of the pot. I do believe they used crab boil as seasoning, heavy cayenne pepper. Delicious. I thoroughly enjoyed them and went back just for the potatoes. Ok, the blackened fish was good too. Apparently, a lot of someones complained about the potatoes being too spicey. So from then on the mashed potatoes were just that. Just mashed potatoes. Nothing thrilling. Nothing exciting. Nothing to return for. I was severely disappointed. The waitress had no idea what I was talking about.

Crazy Lady swears I cauterized my taste buds long ago. So don't ask me if something is spicey hot. It usually isn't. ;)
