I am chicken (excuse the pun).....

No "knead" lol! to be afraid of break making!! Very easy! Thousands of recipes on the web, any basic one will do, don't over knead and cover when rising. I've been making home made bread since I was 18! Good luck!!!
 
I'd start with a basic white bread recipe. You'll be going nuts before long! I now make English muffins, bagels and all kinds of breads. You also might want to look on Freecycle or at the Salvation Army for a used bread machine. Sometimes I use mine to mix and rise the dough. I always bake in the oven though. I just like the way it comes out better.

maybe it is something used during processing of the flour. hmm.

yes, wheat rolls are not always the tastiest. they can have a funky after taste, i noticed.
 
Maybe you could start saving the ingredient labels on the bread products you buy and compare them. It might help you figure it out, over time.
 
I have saved labels forever and all I can figure is that it is a preservative of some sort. THe problem I have is that Pizza Hut and the Pretzel twister won't give you their ingredients list, and those two places will make me die before I can get to the truck.
