I all ways crack into a small juice glass and then pour into about a 1/4" of bacon grease. I prefer the yolks warm but still liquid, I do like the whites done though. Instead of ever flipping them I just use the spatula to and constantly kick the grease over the top surface of the egg. This method works very well. It eliminates chances for breaking the yolk at flipping.

I have been eating eggs this way for years ---

Dad would always get up first sunday mornings cook a mountain of bacon - fry the eggs in the grease - never turning the eggs over just using the spatula and flipping the hot bacon grease over the tops of the eggs - grab some toast and have breakfast.

DH is not a fan of runny yokes until I made breakfast one morning and they came out just like dad makes yummy !

I never hit the eggs on the side of the fry pan or a bowl or anything I hold the egg in the palm of my hand and take a butter knife and tap the egg just enough the open it - my girls lay really hard eggs also so it has taken some pratice to open the egg without breaking the yoke, but the butter knife works for me and buy holding the egg - the yoke is on the opposite side your are cracking so less chance of hitting the yoke ( at least that is what I think anyway LOL )
