The electrolytes are fine to give. They should not be given for more than a few hours at a time and fresh plain water supplied, but they are fine to give.

Not the electrolytes she is using that is meant for humans. Can you provide more information?
How old is she?
What does she eat?
Look inside her ears for infection, look her over for lice/mites?
Do you have Marek's in your flock?
Could she have eaten anything toxic or moldy?
We are in Florida, no freezing temperatures. I noticed this behavior yesterday when I let them out of the coop into their run for morning goodies she is a year old. They have no access to anything besides what we give them, we are in the city so they have to be contained. There has been no crust or odd discharge and she has been laying like normal. no extra fluff besides her usual fluff but this morning she has been doing this odd neck stretch, but I haven't looked much at wry neck information just yet. No history of Mareks, and their feed is Purina® Home Grown® Layer Pellets or Crumbles with some scratch and meal worms.
 
Yes, there are vitamins/electrolytes that can be purchased at the feed store, but the OP is using what they have on hand - it's fine.
I'm sure that you probably have at some point given your flock food, medication, vitamins, etc. that was not necessarily "labeled" for use in poultry.
It's o.k. that you can't answer the question asked, we all learn new things everyday.

Can you get a video of the odd neck stretch?
Have you looked inside her beak for obstruction or sores like canker?

Neck stretching is often associated with a crop issue - I would check her crop and see what it feels like.
Wry Neck is a neurological symptom that could present as stretching of the neck, curving of the neck and imbalance. It wouldn't hurt to give her 400IU Vitamin E along with 1/4 tablet B-Complex once a day. Offer her some scrambled egg to help with the uptake of E.

I would still absolutely investigate the crop and inside her beak and get a good look at her droppings. (photos if possible).
