It's pig intestine aka hog guts. It's one thing for chickens to step in poop. Try eating the part of the animal that helps process it.
What's a chitterling? I live in MN - I don't think we have those here....

They stink to high hell. You'll have to find someone that can clean and cook them well.

Well alrighty then - I think I'm not going to look too hard for them! I have a lot of Scandinavian blood in my veins so one of our delicacies is Lutefisk. You know, cod soaked in lye then boiled. Not bad if it's done right. Not done right, you get a blob of fish-jello on your plate.
 
Our limiting factor is refrigerator space for letting them rest. We bought 20 and had planned to split processing between two consecutive weekends. Well, a friend has all the processing equipment and is helping us out so it'll go faster so it looks like we're cleaning out the fridge in 6 weeks.
My upright freezer is actually larger and I love it!

You can put them on Ice in a cooler during the resting period, keep them drained and add new ice as needed.
