I need a sweet potato/marshmallow recipe

Godsgrl, that's pretty much how my Mom made them, the quantity though, was a least a stick of butter. 'Course EVERYTHING had to have butter in it for her. And lots of honey and brown sugar. Broil or bake to get the marshmellows browned - but not burnt.

My a bit more healthy version: cook and mash up the sweet potatoes, beat in a few eggs, spread in casserole. Top casserole with struesel-like crumbles of brown sugar, ground pecans/pecan meal, dash of cloves, bit of cinnamon and some canola oil. Bake or broil to get the top crunchy. I cheat and use a can of pumpkin sometimes.
 
Wow, that sounds really good!

Now the decision will come down to raw or canned! Choices choices.

Nova- nothing compares to raw. My family has done a sweet potato/marshmallow recipe that has been handed down for who knows how long where you shape the potatoes into balls and put the marshmallow in the middle. You peel and cut up 3 cups of sweet potatoes and cook about 15 minutes until tender. Drain them and add 1/4cup butter, 3/4cup brown sugar, 1/4 tsp salt and a splash of vanilla, then mash well. cover and refrigerate overnight. The next day take out the mixture and stir well (do not drain the water excess) and add crushed cornflakes to the mix. The amount varies depending on who makes them, but the more you add the thicker the mix gets and will hold shape better. Then scoop out a handful and shape into balls. Once shaped, indent the middle so it becomes more like a cup and put a marshmallow in the middle. Place on a foil lined sheet and bake at 350 until the marshmallow starts to melt.

My youngest loves to help make these and she usually is in charge of putting the marshmallows in the potato cups. My entire family, kids included, eat them up.
 
Here is how I do mine. Personally, I find them revolting but DH and the kids LOVE them.

Chuck whole sweet potatoes. Boil until tender enough to mash. Skins will be peeling off, save those to divide between the dogs/chickens/guinea pig.
Mash hot potatoes. Add butter until the potatoes get lighter. Add brown sugar until they get dark again. If they have cooled down, pop them into the oven until hot. Top with marshmallows and put back into the oven until melted and browned as much as you like them.
 
Bake the sweet potatoes in the oven with the peel. When they are done peel them and slice them. Lay them in a baking dish. Put butter and brown sugar and bake for a bit. Put the mini marshmallows on top. Put them back in the oven until they are slightly melted and brown on top. I personally prefer non canned for this recipe.
