I always cut my own game up for the very reason you have suspicion. I am raising my own pigs for the first time and those I keep I will butcher, cut and package myself.

Another thing about commercial processing is they probably are not cleaning all the meat off the bones (as you might do if you were processing the carcass yourself) for the sake of saving time.

OTOH, during deer season, I always pick up huge bags of fresh deer bones for my dogs, from deer that the butcher is processing for hunters. I'm a little surprised at the amount of meat left on some of the bones.
