It was my first time and down here there's not many choices. There's another place but they don't smoke or cure meat. And it's quite a drive.

You could probably file a police report, a fraud report with the BBB but I would not waste my time...I would go down to his business and raise heck in front of everyone.

You could do that or you could chock it up as a learning lesson. Sometimes it pays to learn how people are. Honestly I would go and see him and tell him my concerns and maybe he can justify it then again maybe he won't be able to. It would be the right thing to do though. If he cant come up with a good reason why then you never have to go back to him and you can always not reccomend him to others.

We buy a pig every year from the butcher. Each half hanging weight is usually between 85 and 100 lbs. Like most folks agree here that you prolly lost some of the finest cuts due to the high quality of the meat you raised.

Butchers that cut meat all day long can surely tell a prime animal when they see one.

Time to change butchers, in my opinion.

My DH does a hog every year so I asked him about your situation and he thinks it smells! <that's what he said. LOL!>

If it were me, I would say something. Ask questions! Make him accountable. Even be nice about it, if you want to. Too often people just walk away with out comunication and that is just sad! He may be able to explain or change your percentage, but I bet he won't scam ya next time.
Some of my best working relationships have started over disputes.

Our big hog we had done last year weighed 360 alive and had a hang weight of 264. It was almost exactly what they told us it would be and that was 70% of the live weight.

I finally managed to get in touch with the other pig owner.......and us two couples are going to pick up our meat together and raise a little heck about it. I don't know if it will do any good...but I have nothing to lose since I would NEVER go there again!!!
