Ideas on how to use mint?

I make mint jelly with it and it's wonderful on lamb, however, it's good on pork chops too. It definitely gives the meat a different taste than from the normal.
 
I too have three diff kinds of mint plant but I dried it so far this year and only use it for tea. The baking recipes and the mojito sound good tho!:-) Mojito recipe anyone? My question is this ) I thnk I'm killing my mint) this is my first year with it and I dont know should I JUST be snipping off the leaves, or should I snip the whole vine down to the ground? I had one plant of each and more seem to keep popping up so I thought it was ok to trim it that way by cutting the whole stem off. Am I killing my mint? What's the proper way to do it?

Alcohol Content 0.44


Parfait Glass

1.25 oz Captain Morgan

Original spiced rum
12 mint leaves
1 tbsp sugar
0.5 oz lime juice
2 oz soda



Place mint leaves in bottom of glass. Add crushed ice, Captain Morgan Original Spiced Rum, sugar, and lime juice, and muddle. Add soda water and garnish with mint leaves.
 
we also use mint in our rasberry lemonade. We just use the cheapest frozen cans of yellow lemonade add crushed fresh raspberries and mint sprigs.
