I'M NEVER BOILING EGGS AGAIN!

Today I decided to try steaming eggs for the first time instead of boiling, because I had to steam some vegetables along with them so I said why not try putting some eggs in there too. I put the eggs in when water boiled and 10 minutes later, I took them out and ice-bathed them for 5 minutes of so. These were eggs that were laid TODAY. Maybe even 2 minutes before I collected them, who knows. They peeled perfectly. Never, ever had I have a fresh egg peel so well (or at all without wasting half the egg white). I used to never boil my own eggs because they're too fresh and can't be peeled whatsoever, but now I know the trick!

I was so pumped to find out about this a while back. It works great with the store bought eggs, but only about 40% of the time with my farm fresh. I wonder if washing them a bit in advance might help? I've also had issue if wanting mine for deviled eggs because the yolk likes to settle to one side. Definitely doesn't allow for that symmetrical deviled egg shape.
 
Thumbtack through the shell at the air bubble makes all the difference, iv never had a problem since, fresh/old, cold/room temperature, straight in boiling/warming with the water, it doesnt matter, thumb tack.

I have noticed that the eggs are slightly less symmetrical, but I usually use store eggs for deviled eggs so I can just boil them. It's interesting that your eggs don't work all the time. I think maybe my eggs are all pullet eggs so they're a bit on the smaller side.
