I'm thinkin' you're right about the 'thermal mass'. I put TEN 55 gal. drums full o'water in my greenhouse (hoophouse) years ago. NO HEAT !! The low temps INSIDE were 10 F degrees HIGHER than outside the one-layer THIN plastic film covering at NIGHT !!!
I think I could build the enclosure to hold jars or plastic bottles inside the styrofoam ,but outside the incubators, to maintain a "better ambiant temperature".
