ewwwI was just watching Bizarre Foods America. In this episode Andrew Zimmerman came to St. Louis to try local cuisine.
He tried brain sandwiches, crispy pig snouts, pig heart pastrami, a dessert made with organ meat and caramel, Bosnian food and went Spoonbill fishing and he fried up some of the meat and roe. We have the largest settlement of Bosnians in South St. Louis living anywhere outside of Bosnia. They started arriving in the early 90s and have brought some wonderful food with them. Lots of them now have their own smokehouses in the city where they smoke beef and lamb in wood fired smokers where they also bake bread.

There's nothing like a bar-b-cue St. Louis pork steak. I could eat them till I fall down. Same with St. Louis style ribs.
We are the biggest consumer of barbecue sauce per capita in the US.

Well it's 5:27am now, and I woke up and couldn't go back to sleep, so I rushed outside to check on them annnd!
I think I'll call it Eureka!!
3 others have pipped now, and with Eureka peeping away it's helping cheer them on.
The biggest egg hasn't pipped yet, but I'm not to worried because it's only the 22nd day and it just may need a little more time. It was my favourite when candling so I hope that it's still as good as when I went into lockdown.
