As promised, here is DW's / DIL's recipe for Chocolate Zucchini Bread

1 cup canola oil
3 eggs
2 cups sugar
1 tsp vanilla
2 oz unsweetened chocolate
2 cups zucchini
2 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 cup chocolate chips
1 cup chopped walnuts (optional)


Bake in preheated 350* oven 45-60 min. or until fork comes out clean
