It depends on how spooked the deer is. If it's just "pushed" it won't have adreneline pumping, but one that's scared, especially if it's been shot at or wounded, is definitely different than one strolling through. I much prefer to drop a grazing deer in it's tracks thaan chase one down after it's been spooked and shot. But yes, handling afterwards makes a difference, too. I always field dress mine to cool the carcass as quickly as possible.

X2 on the processing. I do my own so I can do it the way I like it. I'm no pro but to me mine taste better than any that I've tried from different processors.
I started doing up my own when the last one I paid to have processed came back in a single grocery sack. That made for some expensive meat. I kill the majority of mine right here on the property, skin 'em & gut 'em in the barn, cut them up, grind some, package & label 'em on the DR table, take 'em to freezer camp in the basement. Hard to get any better'n that.

What does it cost to have one processed in your area? Our renter's son got a small doe (his first at 14 years old, so they weren't picky) and they paid $65 I think. You know they didn't get much for that!
We've never paid to have one processed. I want to know that I'm getting what I harvested!

Yeah we had a man that use to process named Bunk. Didn't matter if you carried in a hundred lb doe or a two hundred lb buck. You'd always get two bags. People called him two bag bunk. You know what you're getting when you do them yourself.

Yes, I've always field dressed mine as quickly as possible to help cool it down. Maybe it's just special deer I shoot but even ones that have run a little after putting one through the lungs I've never had one be tough or gamey. But yes dropping them where they stand is always preferred....also less work for me.

I'm far from a pro as well and also way more OCD than any processor I know so I always make it cleaner and better tasting than any processor I know.....plus it costs way to much to get one cut up around these parts.

Depending on what specialty cuts you get done round here it's roughly $70 (size of deer doesn't change the price either) for basic cuts and wrapped in freezer paper.

Last one I had done was $65, if I recall, but that was a bunch of years ago.

My first one I got processed. Still had silver skin in it. Worst tasting deer I've ever eating.
