I don't think they were roosters, just slow-maturing hens. Some people don't get eggs until 35-40 weeks. They were likely white plymouth rocks - maybe a heritage variety that was slow to mature. True heritage birds mature much more slowly than hatchery chicks in my experience. If your RIRs are a deep, dark brown, I'd recommend posting photos before eating them.
