During lunch/dinner rush, my uncle and his sous chef only washed their hands when needed (after touching raw meat, or anything sticky, wet, etc.) If they were wearing gloves, they would not have even realized that something was sticky or wet. Their kitchens were usually kept immaculate and sanitized, so touching dishes and fruits and vegetables did not regularly require hand washing; but if something was off with anything, they would not have been able to tell with gloves on.
