It's D Day

Hello everyone,

Today is My D day...I have killed 4 so far and I have them in a salt bath after cutting up. My question is how long should I keep them in soak??? When can I freeze them and where will I find bags large enough to consume a whole rooster??? hmmmmm

i know that it is not good to salt the meat before you freeze it, the meat wont freeze well and it may get spoiled. if you want to keep it in to a salt bath, why don't you do that before cooking?​

OH NO..DON'T TELL ME THAT...I JUST HAD IT IN SALTED WATER FOR 2 DAYS....
 
I would not worry, salted meat freezes fine, ham, bacon, corned beef, salt water fish and so on. It would take a huge concentration of salt to lower the freezing point enough to be a problem.

Your salt bath will not hurt it at all!!! I always soak my wild gamebirds in salt before freezing and I've never had a problem. Your concentration of salt is not that high in a salt bath.

You would have to literally pack in salt to get it to not freeze at or around 0 Fahrenheit. And, a home freezer is typically set at about -10 Fahrenheit for best quality/longevity of food. It would be impossible for it NOT to freeze at a temperature much below 0 Fahrenheit no matter how much salt was in it.

I can vouch for salted meats freezing just fine - I dropped a whole frozen ham on my foot a couple of years ago when getting it out of the freezer for Christmas, while wearing only socks. It did NOT feel good.
