Broccoli Cheese Soup
1 large head broccoli, chopped
1 onion, chopped
4 to 5 cups potatoes, diced
2 carrots, sliced
1 head cauliflower, chopped
6 cups water
Salt and pepper to taste
Cook vegetables in water with salt and pepper, in covered large pot, until vegetables are tender, about 15 minutes.
While vegetables cook, make sauce.
4 TBSP butter
4 cups milk
4 TBSP cornstarch
Cold water
4 cups grated cheddar cheese
Heat butter and milk together until hot but not boiling. Mix cornstarch with cold water, about 1/2 cup. Stir into milk mixture and stir constantly until mixture thickens, about 1 to 2 minutes. ( You may need to add more cornstarch mixed with water). Add grated cheese, 1 cup at a time, stiring to melt cheese. Drain vegetables. Add sauce and stir to combine.
This makes a large pot full! Enjoy.
 
I never use a recipe when cooking soups. But, I'll share some of my go-to ingredients. Most (not all, but most) soups benefit from a splash of liquid smoke and a pat or two of butter, after the cooking is complete and the burner is off. This is also when I decide if the soup could use some thickening. Instant mashed potato flakes are my go-to thickener for soups
