*~* JULY Canning/Preserve Swap Let me know when you receive *~*.

Everyone PLEASE REMEMBER to bubble wrap your jars very, very, very.....did I say very? good. YOu all know how the postal workers like to use fragile items for footballs. I would also recommend that you not even write fragile on the box. I sent a whole box (about 20 lbs.) of home canned items to Scrambled Egg and only one little jar out of 6 or 7 quart and pint jars broke. (that probably happened when dropped off at her house) i didn't have anything written on the box except for her addy.

Please....Mrs.Glassman don't write fragile on the box you send me and please bubble wrap it very, very........well you know what I mean, very good

Pickled Dilly Beans

2 lbs. fresh green beans
4 small garlic cloves (1/2 tsp. minced garlic = 1 clove)
4 tsp. dry dill seed (not dill weed)
1/2 tsp. red pepper flakes
2 1/2 c. white vinegar
2 1/2 c. water
2 tbsp. kosher salt

Was beans and break off stem ends. Peel garlic (unless using minced). In 4 sterilized jars (pint size) put 1 clove garlic (1/2 tsp. minced), 1 tsp. dill seed and a pinch of red pepper flakes. Fit beans in jar, allowing 1/2 inch head room at top of each jar. (Trim beans if necessary).

Bring vinegar, water and salt to a boil. Pour over beans, filling to within 1/4 inch of rim. Fasten jar tops according to manufacturers directions and place in a boiling water bath, covering lids with 2 inches of water. process at a hard boil for 10 minutes. Remove and cool. Let sit for 2 weeks before using so that the spices can "marry".
