Just learned a good way to hard boil eggs - yeah really!

I always used to boil the heck out of an egg to get it hard boiled. Now I cover it with cold water, bring it to a boil, turn off the heat, and leave it covered in the hot water for 15 minutes and it's perfect. Not rubbery anymore. Just thought I'd pass this along.
 
Are the eggs easier to peel when you boil them this way? I find fresh eggs are so hard to peel. They make ugly deviled eggs, but they taste the best.
 
you can do it one of 2 ways.... Bring the water to a boil... remove it from the heat and place it on a diffrent burner.. and add the eggs.. and just let them sit.

or put them in the water n let them sit in the water as it begins to boil before you turn off the heat..

I like the add the eggs to the water. then boil.. I find the water heating up gradually. and heating the eggs up gradually. i have less crack shells as it boils
 
I do this too! It makes them so much easier to peal, IMO.

i have been cooking professionaly for about 6 years now, the BEST way i've found to boil an egg, is put a LOT of salt and Vinegar, they break down the shell and the inner skin.
15 min in the boiling water is perfect

shocking them in an ice bath is as well very helpful to the separation of the shell.
 
Fill your pan with cold water and bring to a boil for about 5 minutes. Put them in a ice bath and the shell will come off great! Even fresh layed eggs. Works everytime!
Or as hot as it is outside just bring one in from the coop and peel it lol... I think my birds are laying hard boiled eggs anyway! HA!
 
Great tips! I like to save pickled beet juice and drop a peeled egg in there. We don't eat a lot of pickled beets these days but the eggs are so good this way.
 
One way to make peeling a fresh hard-boiled egg easier:

Crack and peel off the shell on the large end of the egg where the air sac is.
Poke a hole in the shell at the small end of the egg.
Blow into the hole in the small end of the egg, releasing the membrane around the egg.
Peel the rest of the egg.
 
Wow - thanks for all the replies and advice. Here's another thing I just found out. If you let them sit in the hot water for 3-5 minutes you will have soft boiled eggs. The time varies by how soft - or how cooked - you want them. I found 3 minutes to be too soft. I'll try 4 minutes next. Peeling them is still not easy. The shell sticks and now they're hot to handle. Ideas?
