I've eaten deer without freezing it many many many times in my life. We usually fix the back strap for dinner like Conan said the same day we process the deer it's kind of tradition in my family.
I have never heard about freezing the meat to kill parasites.

Carolina BBQ is THE BEST! I just wish we had a reliable local source for it. Around here (Maryland) it's catch-as-catch-can!
