Left Over Chicken and...

I have no idea! I have all these left over leg quarters I cooked last night. What we have left in the house is what we have left... period! These legs need to feed us for at least 2 more days, because other then that I have 1/2 lb ground turkey besides.

So... what to do with these (already cooked) leg quarters?

I looked through our house and we have the following (plus lots of random spices and herbs):

Creamed corn, green beans, canned tomatoes... Rice, potatoes & onions. I have a small bag of corn meal left, whole wheat & all purpose flour. One package of yeast & one pack of taco seasoning.

Milk and eggs of course too.

Yep... that's about all we got left around here.

At my house that would become a chicken-vegetable soup with corn bread or yeast bread. And the next day left overs of same. The wonderful thing about making soup is you can make the ingredients very flexible. If you don't have chicken or other broth, the potatos, tomatos and other veggies could make the broth tasty.

Or you could make a turkey and rice dish for supper tonight and serve with your veggies as side and/or yeast bread. You could make a the turkey casserole using a white sauce as base or you could use onions, tomatoes in rice as it cooks (use some broth from turkey to cook it in if you have it.), then add boneless chicken and taco seasoning to taste....kinda like spanish rice. Any left overs could be added to soup for tomorrow night.

Chicken fried rice with lots of veggies..... or

Chicken Stir fry over noodles.... or

Chicken pot pie...... or

Chicken and gravy over rice.... or

Chicken and noodle casserole.... Make the same way you would tuna noodle but sub chicken.... or

Chicken enchiladas with beans and rice.... or

Chicken and bean burritos..... or

Chicken crispy tacos.... or

Edited to add...... Flour tortillas and noodles are really easy to make. The noodles are just flour and eggs kneaded together and rolled out and sliced and here is a recipe for some flour tortillas....

Flour Tortillas

4 cups all-purpose flour
2 teaspoons salt
2 teaspoons baking powder
1/2-teaspoon sugar
4 tablespoons butter
1-1/4 cups warm water

Place flour, salt, baking powder, and sugar into the mixing bowl of mixer with paddle attachment. Stir on lowest speed to mix ingredients. Chop butter into small pieces and add to flour and allow paddle attachment to cut the butter into the flour until you can’t see the butter anymore.

Add the water and mix to combine. Remove the paddle attachment and replace with the dough hook. Knead the dough until it is satiny-smooth…about 1 to 1-1/2 minutes.

Clean and oil the kitchen counter where you will be working. Remove the dough from the bowl and cut into 12 equal pieces, each about the size of an egg. Cover with a damp paper towel and allow to rest on the counter for 10 minutes.

Heat a 9-inch cast iron skillet on medium-low heat while dough is resting. Roll dough out with a bollito or small rolling pin until dough is about 1/8 inch thick. Cook each tortilla until it has light brown flecks on each side.
Roll next tortilla while the previous one is cooking.

Makes 12 tortillas.

Pull the meat off the bone, make some sauce with the taco seasoning and onion and herbs or whatever. Put that in a casserole. Make cornbread batter with the meal and corn and whatever else sounds good and pour it over the top and bake it.

After I posted my idea I realized it was very similar to Big Mike's Pastel de' choclo recipe. I'm sure I spelled that wrong but you can find his very refined recipe easy enough.

I wish you lived closer, I'd swap a wheel barrow load of cabbages and collards for one thin slice of biscotti.
 
I love to make chicken taco type things, with a cooked chicken i take the meat off the bones and reheat it in a pan then put the taco seasoning and water in the pan with the chicken to make the taco meat, and have it with tortilla's lettuce, tomato, sourcream and cheese

Doggone folks that is some good ideas !! Now I gots to make some fresh tortillas. I love whole leg quarters - especially because the thigh portion to me is the perfect piece off the chicken. Love that rich flavorful meat.

Cube the meat off the leg quarters. Make some twisty noodles. Get a can of olives. Dice up some broccoli and celery and whatever else you have lurking in the hydrater or growing in the garden.
Get a jar of the cowboy candy.
Let the noodles soak in the cowboy candy and the juice. After the juice is absorbed , throw it all together with some mayo.
refrigerate- it is best really cold.
It goes quickly so do not expect leftovers.

I never get leftovers. teenage boy.
(My son kissed me good bye on the top of my head this morning. I did not feel too badly about that until he did it to his dad. My husband looked shocked.
