I made a little video. Please excuse my silly hand and squeaky voice. It gets better toward the end when they start flapping.
If you have a good scale, by all means weigh the eggs. I also trace the air cell at least once a week in pencil so I can see the progress.
As to the yeast..no, food yeast will not work. It has to be brewers yeast. You can get it pretty reasonably online. I got it on Amazon last year, and their are a few horse websites that sell it by the 5 gallon bucket that are pretty inexpensive. A couple teaspoons each day sprinkled on top of the food will do the job.
