Well MAT, if I get 150 out of the remaining 230, I'm gonna close up shop being content with what I've got. Plenty to eat on until over into next year, and a few to sell. Two thing's I'm lacking......pen space and a feed budget to carry any more......... I'll keep up with yall's success though.

I can't wait till egg pickle'n time.... Need to get a supply laid in for winter... As it stands right now. I got 4 pickled eggs... Gave away 3 pints I had stashed. And the jar I been eat'n has 4 left... mail'n eggs all over the country has hurt the egg pickle'n. Seems like that's slow'n down, so I can get my winter egg pickle on!!! Bill

my husband loves pickled eggs.. maybe i can entice him to change his mind over quail (he sees no use for them but still allows them to live here.. although he does it grudgingly)

LiRalphieRoosMama has a recipe on here somewhere for spicy pickled quail eggs. It might be in the Recipes section or you might have to look for it, but it's around here somewhere. If you do a search for 'pickled eggs' you should find several recipes.

HERE YA GO!!

Let the eggs sit in vinegar for 12 hrs and shells will be gone. Membrane will still need to be peeled like a grape skin, but its easy. I do it this way for pickling. BTW, the brown spots on coturnix eggs is just paint, it comes off and floats in about 30 mins

Drop them into sanitized jars and fill the voids with 50% Louisiana hot sauce and 50% vinegar with some pickling spice and mustard seed. I'v made literally 100's and they never last long and are killer with cold beer. I have trouble leave'in them alone once started

This one is Dirks and its a keeper too. Bill

I use this recipe to pickle either eggs or sausages. It takes about 7 days in the fridge for the flavor to penetrate well into a "C" egg. Longer is better.

Pickling Brine
5 cups white vinegar
2 cups water
2 tbsp. + 1 tsp. pickling salt
1 tsp. ground black pepper
2 tsp. red pepper flakes
2 tbsp. Texas Pete / Louisiana hot sauce

Be careful if you go with the 50% Louisiana hot sauce one. No matter what I do, I'm gonna drip some of the juice off that egg, on my belly, on the way to my mouth.... All my tee shirts now have at least one big orange stain. ALL IN THE SAME SPOT!!! I need one of those big Ol' necklaces bout the size of a baby moon hub cap. Cover up the orange spots and save this seasons hot rod tee shirts. You know a good hot rod tee shirt and new jeans, doubles as my dress clothes.... GETTER DONE!!! Bill
