Regardless of what the manufacturer says to set the humidity, if you keep tabs on the air cells, it doesn't matter what the humidity actually is. If you set it to 50% and air cells aren't growing, then you can lower the humidity to allow the eggs to dry out and shrink.I got this thingView attachment 3576939, comes highly recommended by a lot of Greek chicken people, and as you can see the shop itself.
