Maybe you could get something like a Minorca, Andalusian, Ancona, Mottled Houdan, or even a Brown Leghorn?? It would be different and more interesting than the typical White Leghorn yet still a good layer and heat tolerant.
Also there are a lot of different color varieties in even the more common breeds like Orpingtons, Rocks, Australorps, etc. so you can get some very pretty birds even within those breeds.
I also have found my Easter Eggers to be absolutely stunning and great variety in terms of looks and egg color, etc. I’ve had 3. They are also very friendly and both heat and cold tolerant. They also lay well. I have some that are 5 years old and still laying well.
I also have a Partridge Rock which is pretty and I thought my Barred Rock was gorgeous as well but I was biased
they are common but stunning.
Wyandottes might work?? Might be a bit too heavy though.
I find my Delaware to be very pretty but might be too plain?
