TIME FOR GOOGLE!!! LOL Just love googling....All of my "official" books say not to can potatoes, split peas, or cabbage. I don't know why, they must have when canning for your family was a big thing. I have since found out that you can can cabbage (tried) with a pressure canner and I haven't had a bad batch yet. I would love to know if someone has tried or knows why they are against canning potatoes. I wonder if it has something to do with people not properly cleaning them or green skin like in chickens.
