We have a friend who showed us how he harvests and he skins them - -- no feather plucking and no scalding water.
I skin and debone and grind the meat. I am a softy with the birds, and surely do not want to know who I am eating (Also our family does not like chicken meat very much)... SO grinding works great, use the meat like you would ground beef or ground turkey...

Yeah see that's why enchiladas work good too. You just boil down a bunch of parts from different birds..like all thighs and drumsticks with a bunch of garlic, onions, spices, red chilies and then shred up the meat. You will never know who's who. One of my sons is really wierd about not wanting to eat stuff from our animals. Even eggs...he was fine eating them from the store but now he won't eat them ...now that they are fresh from the hen's you know where LOL! I hope he gets over it.
