They seem fascinated with my not-normal birds and their coloured eggs, always going on about how pretty they are. And they have such tales to tell. He does a lot of work for "ethnic" folks apparently. VERY odd requests for how they want the birds prepared and another customer that was into Silkie meat on a very large scale. That had me just a TAD grossed out!!!

He will also hire out to raise animals for folks which is where a lot of his colourful stories come from.

Same out here. North of me, is a large Asian community, as well as other religions and backgrounds. When lambs are ready to sell around here, the Muslims come to get the lambs, but they have to be butchered right there on the spot. I've not had the pleasure, nor do I ever intend to, but a friend of mine has. Silkies and black skinned chickens are preferred, as are different feather colors. I don't sell anything to anyone, that's just me..
 
DH hunts alot and is actually pretty good about whacking the roos and dd and I usually clean them. I skin though, not feather pluck. We did a bunch of Muscovy drakes before Thanksgiving. Its just finding the TIME to do it all. I usually want to do a whole bunch at once and get it over with. I have a feeling we will be doing a bunch of noisy key west roos next. They are small so its hard to get motivated lol. There is too many now and they are being rough with the girls so thier # is up lol.
I am going to keep my handsome original rooster (a gold duckwing), Captain Morgan, and one of his sons that is from a Crele mom. The son has barring so will mate him back to his mom to start my own line of KW Creles

haha...i prefer goat to pork any day. just cant make myself eat pork. goat makes pretty incredible jerky by the way

Dang it! I love the skin the best! Although probably not so much on roos this age(s). Soup, stock, and fajita chicken meat, and I will be happy. The last chickens I did was back in the early '80s, and I plucked! Lots of wine went into that operation!! The rooster Cachitorre was excellent though!

Spring goat and lamb is the best!! I LOVE LAMB!!! People out here though are stuck in the war years, when mutton was on many menus. So they think of lamb as the same as grown sheep. NOT the same thing, but you can't make them belive it. I told my friend one time we were eating venison, when in fact it was lamb. She LOVED IT! "That's the best deer I ever at, can I have your recipe??"

Goat is getting really popular around here, too!

We have @80 Spanish meat goats we sell.
We also have Boer goats to clean up the fields (multifloral rosebush) and for milk

Nearby we have a large Mexican population, as well as a decent sized Ecuadorian population. They also prefer to kill their own and process right away to take right home to cook that day.

Never been as amazed as when a big group of Ecuadorians bought a cow.
They all showed up - the men killed the cow and then drank beer while the women processed the cow from tip to tail!
Every single bit! They even drank the blood
