Meat Loaf.....whats your favourite recipe?....

The recipe below is from Paula Dean. This is the best meatloaf I have ever had and I like all kinds of meatloaf. I saw her make this on her show and she lined her baking pan with the bread slices to soak up the juice. She never mentioned what to do with the bread after the meatloaf was cooked but I had used some stale sourdough and it looked so tasty after the meatloaf was done, I tried some of it. Yeah, I know, hamburger grease is not good for you but the bread was so yummy that when I make this(very seldom due to the calories) we include the bread on the bottom of the meatloaf and serve it up that way. I also made it to the letter of the recipe. Usually when I make meat loaf I just dump things in and it all turns out good.


Cheeseburger Meatloaf and Sauce

Ingredients:
1 lb ground beef
1 teaspoon Paula Deen's House Seasoning
1 medium onion, chopped
1 medium bell pepper, chopped
1 cup grated Cheddar cheese
2 tablespoon Worcestershire sauce
1/2 cup sour cream
1 cup crushed Ritz crackers
1 teaspoon Paula Deen's Seasoned Salt (just a mix of garlic powder, pepper and salt)
2 slices white bread (I use a crusty stale bread like day old french or sourdough)-

Directions:
Preheat oven to 350 degrees. Mix all ingredients except bread slices well. Shape into loaf. Place loaf on 1 1/2 quart loaf pan lined with white bread slices. Bake loaf for 45 minutes. The bread absorbs the grease and should be discarded after loaf is removed from oven.

Sauce:
One 10 3/4-ounce can condensed cream of mushroom soup
1 cup of milk
1 1/2 cups grated Cheddar cheese
chopped onions, to taste - optional
1 bunch parsley - optional

Heat soup and milk over medium heat; add cheese. You can add chopped onions and parsley to the sauce. Pour over meat loaf or pass at the table.

Yield: 4 servings
Prep time: 10-15 minutes
Cook time: 45 minutes
Ease of preparation: moderately easy

Note: there is no mention of calories. This recipe is not on the American Heart Association for healthy eating. But everything in moderation. I make this about twice a year. Small peices to serve and lots of veggies on the side. Balance out the calories a little. Or better yet, make it for Birthday's. Everyone knows that there a no calories on Birthday's.

I hope someone will try this. Even people who don't usually care for meat loaf seem to like it.

FAMILY FAVORITE MEAT LOAF


2 lbs. ground beef
1 Tb. Horseradish
1 tsp. Salt
¼ tsp. pepper
¾ c. quick-cooking oats
½ c. ketchup
¼ c. milk
2 large eggs
1 medium onion, chopped

Mix all ingredients and form into two loaves. These can be cooked in bread loaf pans, placed on a cookie sheet with foil, or the special draining meat loaf pans. Bake at 350 degrees for 45 minutes.

Tip: It is best to use ground beef instead of beef chuck in meat loaves; otherwise they may be dry and tough. Placing two slices of stale sandwich bread underneath each loaf while cooking is a good way to soak up any excess fat.

SAUCE
½ c. ketchup
1 T. Horseradish
3 T. Brown sugar
2 t. Prepared mustard
 
This recipe has been in our family forever (except the soup mix part)

1/2 c crushed saltines
2 eggs
3/4 cup milk
1/2 packet Lipton onion soup mix

Put all ingredients into a bowl and set aside.

1 1/2 lbs ground beef
1/4 - 1/2 cup ketchup
Squirt of mustard
A few shakes of Worchestshire sauce

Mix these ingredients together well. Take the bowl of stuff and mix well. Add into ground beef mixture. Transfer to a loaf pan and bake at 350 for 90 minutes.

TRY THIS ONE. My stepson hates meatloaf and loves this.

2lbs ground beef
2 sleeves crushed ritz crackers
2 eggs
Onion Powder
Garlic Powder
Salt & Pepper
Stuffing items: Whatever cheese you have on hand, 1 large onion, 2 small packages of mushrooms.

You sautee the large onion, pepper and mushrooms in some butter until they're cooked.
In a bowl, mix the meat, eggs, crackers and seasonings. Slice your cheese (I've used mozzarella, cheddar or swiss). Put a layer of meat in a glass baking dish. Cover with a layer of cheese slices and cover the cheese with the onion/mushroom mix. Top it with the remaining meat mix.
Cook on 400 degrees for 45ish minutes.

I love butter too but my butt pays for it.
