this is the spice mix we make, it's from Texas BBQ King- 2c pork stock, 4TB sea salt, 1TB paprika, 1TB blk pepper, 1TB onion powder, 6 garlic cloves, 1tsp coriander, 1tsp marjoram, 1tsp ground savory, 1tsp ground sage, 1tsp ground mustard, 1tsp ground thyme and 2tsp prague powder #1. We use that mixed into 10 lbs of whatever meat. There's a book called Great Sausage Recipes and meat Curing by: Rytek Kutas (4th edition) that has some delish recipes. Want to try salami and pastrami next if i find the time. Your burgers sound like they'll be delish.
Thank you looks like a good mix.. burgers were awesome, mixed in some other spices as well.. like some liq smoke,garlic,onion powder,worchestshire,sage, were pretty tasty.. one nice thing about these burgers there isnt much shrinkage when you cook them, like hamb.. or any burg with lots more fat.
 
The book by Rytek Kutas has been invaluable to me over the years. I've used a great many of his recipes and have never found one I haven't liked. I've often have made venison pastrami by dividing a hind quarter into three pieces. After the meat has cured I coat in pepper and coriander then slow cook it in my smoker. I've had many people remark that it is the best pastrami they have ever eaten.

This morning started out with a call from my old farmer friend. Each morning he calls, let in ring once, then hang up so that I will know he has started another day. With an assigned ring tone that say "he takes his tractor another round" I immediately can put my mind at ease. Today however, I followed up his call by calling him to make sure he still had power.

This afternoon David and I went to the farm with the intention of visiting for a while and then finishing the evening hunting. When we arrived we found that my best friend and his wife were there. They had came out earlier and taken him to lunch and then Bob's wife presented him with a painting she done of a one room brick school house that is in Greenfield Village. Marvin has often talked about having attended that school as a child and about the numerous times Henry Ford visited the school. He hasn't seen the school since it was moved to Greenfield Village so her gift was a pleasant surprise.
 
Opa, that sounds like a very nice day! That painting sounds like a heartfelt gift! I enjoy hearing about acts of kindness rather then all the crime and greed that's often on the news.
I hope everyone handled the poor weather ok today.
 
Thanks for the offers on birds Our roost/jlynnet/silly chicken and ibrykowsli also rtf for transport. I'm gonna try a figure out a game plan to get some girls starting next weekend. Took my neighbor shopping because her car is down and GFS in Livonia had small hen turkeys left from thanksgiving for about 6 dollars. Great price if your on a budget.
 
I washed off Bonnie's (the new chicken) legs, since she has scaly leg mites. It must have felt so good, for she fell asleep in the water, and I had to towel all of her feathers off.

I will look into a saddle for her.

Of the place Bonnie came from, you would think she would be skittish. Sweetest. Hen. EVER. She loves to be held, follows me.

She somehow got out of her coop to try to follow me and I found her out by the driveway. Made sure everything is secured now.

I can't wait to see her when her feathers all grow out. I think she is a Production Red. About 2 years old.

I've got power again. My brother had followed me home with a generator and it came on just before we got it running. Electricity is something I don't think a lot about until I don't have it. I guess I'm just not the pioneering type. Hope everyone else has power. I was surprised, when I left at 2pm it was down to 64, when I came back around 11pm it was only 59. Glad it wasn't colder outside so at least I didn't have frozen pipes to deal with.
 
Around 14:00, winds picked up a bit & the ice was flying off trees like little missiles! And, of course, the power went out. Already had a good fire going, so I did "pioneer" it for a few hours. Knew DH twofold be home no later than 20:00 or so, & was too lazy to go out &'start generator (+ I actually have never hooked it up myself! but pretty sure I could follow all the directions on the electrical panel :)).

Finished putting ribbons & bows on presents, then as it started getting dark, lit an oil lamp, grabbed a REAL paperback (vs. Kindle, iBook) & read. Power was only out for about 4 hours; came back on when he was 5 min from home. I know we are lucky; 1. Cuz there are gonna be lots of people with no power for days & 2. We have a generator.

I'm in hard hit northern Oakland county. We are waiting for the power to come on. My Dad decided to tough it out last night. If he doesn't have power this morning, he said he'll come over. We've got the wood stove going, so most of the house is toasty. I hope it comes on soon!
The chickens were out in the slushy stuff yesterday. We give clean water and they drink from a dirty puddle. Must be too long of a walk for the clean water.
 
We are in Northern MI, close to Huron, south of Alpena. Our power stayed on but we now have over 2' of snow, roads are just getting cleared. More snow forcast through Friday, life goes on.

I will have a starter flock of Icelandics available in a month or so, that will leave me 3 separate small flocks of Icelandics. PM me if you are interested in a nice flock of these ancient chickens. Mine are all laying nicely, and handling the winter well. I am thankful for that. Life goes on.
