Been busy that last couple of days getting ready for Christmas Eve. That's when the family is coming over. Lots of manicotti to make and more fried cakes. Still need to finish up on the wrapping.
Even tho it's cold out, there is no wind, so not so bad. Took the dogs for a walk in the fields out back. Didn't get shot by a hunter, so that's good. Had to chase Krisrose's turkeys back in her yard that escaped. So, enough exercise for me! Have a good day all....

I didn't understand why egg production was so WAY DOWN, until I saw a hen setting in a different spot, in the dogs lean-to, on top of the igloo made of straw for them in there and way at the back, I decided to give her a couple minutes to finish, then went and climbed up on the straw igloo and way to the back and discovered 19 eggs in a hole!! They'd been hiding them.
I have seen the roo mounting her, so I think she's probably laying, I just hadn't seen it. And probably some of her eggs were amoung the 19. Wish I'd known, I would have put some in the incubator with these others.

Manicotti

1/2 lb. ground beef
1 clove garlic, crushed
1 cup ricotta cheese
4 0z shredded mozzarella cheese
1/2 tsp salt
1/2 cup mayonaise
8 manicooti, cooked and drained
1 jar spaghetti sauce (16oz)
1/2 tsp. dried oregano leaves
Parmesan cheese

Brown beef and garlic, drain fat. Mix next four ingredients in bowl; Stir in beef. Fill each manicotti with about 1/4 cup cheese-meat filling.
Place in baking dish, cover with sauce. Sprinkle with oregano and Parmesan cheese. Cover with foil. Bake 350 oven for 20 min.
Remove foil, bake 15 min. longer.

It's my families favorite.
