I am a sucker for home improvement projects and this is a home improvement project for chickens so even better!
I am hosting a couple of different bunches of friends for tea and brunch over the next few days so I have spent the day baking. One has to be gluten free which is a bit of a challenge on the baking front. Just finished making a quite passable flourless chocolate hazelnut cake.
If you need any gf advice let me know :)
 
It is so chilly! These three are in a pre-roosting huddle and I wanna squeeze in there too.

And now i am off to make bread. I measure out 4 loaves at a time, and have a stack of premixed containers so i can just grab one and make a loaf. It is weighing out all the ingredients that is the time consuming part of gf bread making. I have a big container of premix general flour too that i do myself. Cheaper then store mixes and more versatile.​

I wouldn't suggest using premade mix for bread. Its fine for most anything else though, assuming it is a good mix.
Biggest tip i can give is let anything you make rest for a bit before baking. It takes longer for gf flours to absorb liquid.
