She's lethargic, her crop is a big squishy ball of water, she won't eat, and every time she puts her head down to peck something she vomits water.

That does sound like sour crop. Have you held her upside down and massaged her crop yet? She should vomit a lot when you do that.

I wish I could help but I also have never worked with pigs. Only GUINEA pigs.
