My best recipe - Spinach quiche

For a few years now I've been benefiting from all of you who have taken the time to post your favorite recipes, so I think it's time for me to pass on the favor. Here's my recipe for spinach quiche, and quite frankly, I've never had a quiche that comes close to this, even in some pretty great restaurants. I hope those of you that give it a try agree!

David's Favorite Spinach Quiche
3 TBS butter
1 large onion, diced
1 cup sliced mushrooms (optional)
1 (10 ounce) package frozen chopped spinach, thawed and drained
3 eggs
1/2 cup milk
1 tsp. dried thyme
1/2 tsp. dried tarragon
1 tsp. salt
1/2 tsp. pepper
1 1/2 cups shredded Gruyere cheese (cheddar is a good inexpensive alternative)
1 (9 inch) pie crust

Preheat oven to 375 degrees. In a large frying pan, melt butter over medium-high heat. Cook onion, stirring occasionally, until soft, about 3 minutes. Add mushrooms and cook, stirring, until barely tender, 3 to 4 minutes. Add drained spinach and cook until moisture evaporates, 3 to 4 minutes. Set aside.

In a medium bowl, beat eggs lightly. Mix in milk, thyme, tarragon, salt, pepper, and cheese. Add cooked spinach mixture to egg mixture and stir to blend. Pour filling into pie crust.

Bake 30 to 35 minutes, until quiche is puffy and golden. Serve warm. (With a nice glass of wine!

That's assuming there are croissants left! Dinner is a whole 2 hours away, that may just be asking too much

But yeah, that would be a divine dinner, that's for sure. Enough calories in it that we wouldn't have to eat for a week!
 
Oh I'm so glad you liked it! I love the seasonings and I also love the smell in the house when it's cooking! I find it a very soothing aroma. I've discovered that the key is to really drain the heck out of the spinach. I actually wring it out in my fist rather than just drain it. In the summer I like to grate up a zucchini and chop up a few leaves of swiss chard and use that instead of the spinach (because I can't seem to grow spinach around here!) and it's also really delicious. I'm planning on making the croissants this weekend. I never thought I'd have the guts to even attempt croissants!
 
i never thought i'd have the guts either, but i'm stepping over the ledge and doin' it to it! the worst that can happen is that they aren't perfect. like that's going to stop anyone from eating them!

and this quiche has so many lovely ingredients, very 'grown up', but still 'kid friendly'. now i am hungry!
