okay, i'm in...i make a no crust quiche to cut the calories and fat.
my kids are big fans!

Do you HAVE to use pie crust when you make them in muffin tins? (or in pie tins for that matter?)

I make mine crustless...that is how you cut the carbohydrate count (and carbs = sugar).

There IS a simple crust you can make with almond meal...

2 cups almond meal
4 Tbsp melted butter

If you use it in a cheese cake, you add some Splenda or erythritol to make it a sweet crust. For a quiche, you can add garlic and other spices to make it more savory. You press the ingredients in to a pie pan and partially bake it before adding your egg mix.​

Thanks for adding that but I am definitely going to make it without the crust. Great idea for a good easy breakfast.
 
Here's my finished product. Yes, I used my woodstove again.

The first was potato and sausage.

I love these fingerling potatoes. Aren't they gorgeous?

I browned off the sausage and pan fried the potatoes with onion, garlic, salt and pepper.

I beat a dozen eggs with raw whole milk (lots of cream in the real stuff), added lots of shredded cheddar cheese and big glop of sour cream. I sliced the sausages and mixed in the potatoes then poured it into a pie crust.

The second one was more ambitious.

Onions, garlic, red and green bell peppers, shredded carrots, and broccolli.

I browned off the chicken inthe samepan I cooked the sausage and stir fried the veggies in olive oil.

A dozen eggs, lots of colby and monterey jack cheese, a big glop of sour cream and it all went into pie shells.

About an hour later I brought it hot fromthe oven.

I am working on gumpsgirl's bread and there will be a green side salad for supper tonight.

okay, threw two together and shared with CATRAY44 and her DD.


on the left:
purple carrots, red onions, gold potatoes, fresh parsley and three cheeses. (mozzarella, asiago & parmesan)

on the right:

ham, mushroom, broccoli & mozzarella

served with a loaf of gumpsgirl bread. (the ones in the pics went with CATRAY44, but we had another two just like them.) i was going to make a salad also, but we were too busy looking at chickens!
