Ok, so this didn't turn out very good. Something is too strong but I can't put my finger on it. Maybe it's the smoked ham I used, maybe I used too much cheddar. Also, DW doesn't buy non-stick spray because her mom is very allergic to all corn and soy products so the "muffins" aren't coming out of the pan very good. I don't even know if I should post pics.

What did you use to grease the muffin cups with?

As far as flavors I'd have to know exactly what you used, brand name and variety.

Mild cheddar, chopped ham and eggs should be a perfect combo.
 
I used canola oil to grease them.

I used Falls Brand boneless buffet smoked ham, green peppers (about a third of a cup, 2 cups Joseph Farms mild cheddar cheese, two teaspoonsful of garlic salt, and a few dashes of pepper. Oh and a dozen eggs.
 
I would have used butter to grease the pans. Using the other pan goes without saying. Cheese is great since it is mild.

I never use garlic salt only granulated garlic if I don't use fresh. Ham is super salty already and usually doesn't need more. 2 tsp is alot. I would bet this is your problem. Sorry.

I think you are right MP- I think the ham was salty enough by itself. I went to the store to buy garlic but Amanda said she doesn't use it she just uses garlic salt. I talked to my mom as I was making it and she advised not adding regular salt if I was adding garlic salt. Probably a good thing or it would have been inedible.

Also, I had been using butter on stuff and Amanda told me not to use her butter to grease (after telling me she wouldn't buy non-stick spray) and told me to use oil instead.
