My version of Katy's Recipe - Holy Goodness it's dinner rolls!!!

Well mine were good but were a tad too heavy for me.
They were a step in the right direction but not exactly what I wanted and I think I know exactly why;
When I was making them the dough was so wet that I had to mix in nearly 7 cups of flour with my kitchenaid to get it handle-able. It made a gorgeous dough but I think that is why the end result was a more dense roll.

My kids loved them though, especially with the whipped honey butter!

We had dinner without my DH who told me to go ahead and feed the children and myself why he drives home in some really nasty rain/slush, so I don't know yet what he thinks of them. I hate when he has to drive home in inclimate weather from 50 minutes away, it makes me bite my nails and worry sick...
 
I do 5 1/2 cups of flour and use the last 1/2 cup when I knead it before setting it to rise. It is sticky when it comesout of the dough mixer. I flour my hands and board, knead in the little bit of four to get it into a round ball. I put it in an oiled bowl and let it rise.

Mine have been super light. Like eating air.

I also use King Arthur unbleached bread flour. I don't have good results baking with other brands of bread flour. Also I use raw sugar. It really does make a difference. Oh, and unpasturized raw jersey cow milk with full cream.

I will try it again with King Arthur flour and buy some raw sugar. Oddly, I love to buy unusual ingredients for my kitchen just to have but have passed by raw sugar on tons of occasions and never picked it up!

How about raw goat milk? Would it work?

My dh loves the dense rolls and the light airy ones but I just like the light ones. I will see how they turn out..they are on their second rising now. If too dense for me I will know what to do the next time.

Mine seem very light but they are hot and you know how they squish together when you cut them while they are hot. Can't wait...all I am eating for supper..on my third one
