Well we had the first of our fresh pork for dinner tonight! and it was to die for
The last time i had fresh pork i was too young to know the difference but after having the fresh pork tonight it reminded me of the fresh chicken i had a couple years ago. the juiciest, most flaverful chicken I ever had (that was my first fresh chicken). Well the same goes for the pork! We deep-fried strips of it it in flower/egg mix and it was just great! I have one quarter to finish cutting tomorrow and then this weekend we are going to use all the scrap meat and fat to make breakfast sausage and pepperoni sticks, which I can't wait for either! Just a quick update about the pig stuff!
LOL Genny!!! I tried to get the lady that processed mine to give me the skin (fried pork rinds - yum!) but she said they don't do that. I did get her to give me the heads, though. Not for me, but for this guy who does work for me on occasion. He was planning to make pozolé out of them.
I have to be the worst mother in the world. My son has somehow stuck his arms inside a pillow sham that has a pillow inside and he cannot figure out how to get it off. He is having a complete panic'd breakdown and the first thought that popped in my head was, "Where is my video camera?!"

When we did pigs years ago we always skinned them, along with all the other animals we butcher. Nobody in the house likes fried pig skins or anything anyway.

And just to make you aren't confused, we only butchered one, the other is going to the auction next month. he is still a bit smaller and will hopefully will be the right weight by auction.
