I'm almost in the same boat as your wife, it's difficult for me to take the first step to eating an animal that I've known personally. My hubby and I will be starting our own homesteading venture one of these days, and I'm trying to prepare myself.

You know, if you start raising chickens, and if you have a good rooster, and you end up with lots of chicks down the road... half of them will be boys, not good for laying eggs. And you can't just have way too many cockerels wandering around, so they will have to be "dealt with" eventually. What's better than solving a problem and then having the solution stock your freezer? Here is a good article with a link to a YouTube video that may really help your wife get used to the idea... it's helping me too!

Or you could just raise broilers that don't really live long anyway because they just grow too fast and become too heavy:
