Yeah, Ive been reading about it being sex-linked, so hens only have one barring gene- which makes it difficult to make them all uniform. Also, I wonder if the lavender will be too light to really show up on the hens, like with buff barred/lemon cuckoo hens...

Yes, if you use a Barred rock boy, both male and female will have a copy of the gene. Which will give you better results in the f2s esp. if only 1 in 4 of the f2s will be Lav.
